Food Safety 2025

GOAL:
FOOD SAFETY: Control of food safety risks in Dairy foods and/or dairy processing environments
 

  1. Research in this area will focus on identifying new tools to control chemical, biological, and/or physical food safety risks to dairy. Projects should identify solutions that are novel to dairy and may include combination approaches. Solutions must have a reasonable chance of being applied in products and/or manufacturing plant environments with minimal impact on taste/functionality. Ideal solutions will be effective in a broad range of products, manufacturing environments, and equipment. 

          An example, but not limited to:

              - Applying cutting edge technology to detect pathogen virulence and fitness factors to improve real time rapid biomolecular identification of new and existing foodborne contaminants

             - Novel clean label antimicrobials to control pathogens in finished products or in processing environments
